Fair Isle Brewing's Salacia Relies on Sugar Kelp as a Key Ingredient

Fair Isle Brewing has introduced an innovative new beer called Salacia, which incorporates sugar kelp from Washington's Hood Canal as a key ingredient. This saison-style brew represents a unique collaboration between the Seattle-based brewery and Blue Dot Sea Farms.

By combining craft beer with sustainable marine agriculture, the beer achieves a distinctive flavor profile characterized by bright tartness and subtle briny notes from the sugar kelp. These sensations are complemented by malted spelt from Eastern Washington. Beyond its taste, Salacia stands out for its environmental consciousness. The sugar kelp used in the product requires no freshwater, pesticides, or fertilizers. The production process of the brew is said to actively benefit marine ecosystems through carbon sequestration and habitat creation, as well.

In addition to this awareness-raising beer, Fair Isle Brewing is also committed to donating to the American Academy of Underwater Sciences’ (AAUS) Scientific Diving Symposium.
