UPPA is an upcycled cacao fruit bite that offers a new way for people to enjoy the white pulp of cocoa beans that's edible yet usually discarded in the process of making chocolate.
At ISM Cologne—one the world's leading trade shows for the sweets and snacks industry—UPPA claimed the prize as an innovative, waste-reducing snack that creatively repurposes the pulp of the cacao fruit. Normally, only 30% of the cocoa fruit, the bean in the center of the fruit, is used to make chocolate but UPPA features an upcycled filling that repurposes the white pulp that surrounds the cocoa bean and ordinarily goes to waste. The resulting product is a fruit bite that's tangy in taste and balances out the intensity of 76% dark chocolate.
