Finland’s Solar Foods developed an egg-free, dairy-free mayonnaise made with Solein, its protein derived from CO₂. Solar Foods calls Solein "the most sustainable protein on earth," since the main raw materials for production are carbon dioxide and renewable energy, resulting in emissions equal to 1% of those generated by conventional meat, and 20% of plant proteins.
With egg supply chain challenges and the price of egg yolk powder fluctuating considerably over the last few years, Solein provides an option that's not only less resource-intensive but also considerably more affordable. Solar Foods’s yellow powdered protein yields three times more mayonnaise than the same amount of egg yolk powder, offering incredible value and opportunity for the food industry.
