IKEA Sweden's New Soup Repurposes Commonly Discarded Edible Leaves

Broccoli consists of stems, leaves and florets, most of which are discarded, despite the leaves being perfectly edible and nutritious—and IKEA Sweden's restaurants are now serving broccoli leaf soup to give new life to an unappreciated resource. This new soup came out of a pilot project led by Axfoundation, and it sees the chopped, gently heat-treated broccoli leaves paired with leeks, potatoes and onions.

“Creating more from less is part of our DNA and runs through all of our product development,” said Erika Norrman, country food manager at IKEA Sweden. “At IKEA, we want to increase access to plant-based food as part of a varied diet, and this initiative allows us to offer an affordable soup made from broccoli leaves that tastes good and does good.”
