Lavanya Bhandari and her company, Ecoroots, are advancing a new approach to sustainable packaging through mycelium-based materials. Ecoroots produces biodegradable containers grown from fungal cultures that feed on agricultural byproducts such as brewery and distillery spent grain—an estimated 200,000 tonnes generated annually in Ireland.

The resulting packaging can be formed within days and offers practical performance benefits, including water resistance for up to four weeks, fire resistance and full biodegradation within three months under natural conditions. Production also generates approximately 90% less CO₂ than conventional polystyrene.

By collaborating with farmers, industry partners and academic institutions, Ecoroots is scaling a circular model that repurposes agricultural waste into functional packaging, positioning mycelium as a viable alternative to traditional materials.
