Food Waste-Battling Edible Coatings

Akorn Technology — a Berkeley, California-based agri-tech startup — has been recognized as a winner in the UAE FoodTech Challenge for its development of a natural, consumable protective layer for fruits and vegetables. This innovation was created by a team with cross-sector experience.

At its core, Akorn Technology's innovation is designed to diminish spoilage by combining vegetable-derived proteins, waxes, and oils to decelerate the ripening process and retain moisture without impacting flavor or nutritional content. This serves to seamlessly fight post-harvest loss, a significant financial drain for producers and a contributor to higher food costs and environmental strain.

As part of the UAE FoodTech Challenge award, Akorn Technology will receive financial backing and access to developmental resources within the United Arab Emirates to advance and expand its product.
