Resorts World Sentosa Opens an Eco-Conscious Seafood Restaurant

Resorts World Sentosa has unveiled Laurus Table, a 106-seat fine-dining destination at The Laurus, a Luxury Collection Resort, showcasing sustainable seafood inspired by Mediterranean and Italian cuisine. Leading the kitchen is Michelin-starred chef and Netflix personality Fabrizio Ferrari, who's 15 years of experience inform a menu rooted in responsible sourcing.

Guests can enjoy an engaging dining experience with an open kitchen featuring wood-fired pizza ovens and charcoal grills, where dishes are prepared using grilling, steaming, and wok-searing techniques.

Signature offerings include Panzanella di Polpo, sea bass baked in a salt crust with fennel and lemon, and Ferrari’s theatrical Scialatielli ai Frutti di Mare al Cartoccio. Aligning with Ferrari’s role as a Marine Stewardship Council global ambassador, the restaurant sources seafood from local sustainable farms and fresh herbs from its on-site garden.
