SOYFT BIOME Converts Soy Fermentation Waste into Functional Proteins
Laura McQuarrie — May 16, 2026SOYFT BIOME transforms by-products generated during the soy fermentation process, converting what would otherwise go to waste into functional protein ingredients. In plant-based applications, SOYFT BIOME's proprietary AquaProtein is useful for replicating the taste and texture of dairy without added sugar.
Already, SOYFT BIOME has two consumer-facing brands: KETOYOU, a high-protein food range built around tempeh and similar fermented products, and JA:YU, a low-sugar, plant-based condensed milk alternative. And now that the South Korean food-tech company is backed by a new investment, SOYFT BIOME has plans to scale its plant-based cream and sauce lines into B2B foodservice channels and expand into the cosmetics and medical nutrition markets. "We’re building toward becoming a technology platform company that goes beyond food, expanding into diverse industries on the foundation of a sustainable food system," said CEO Seoyeon Yoon.
