The AI food waste systems developed by Mill, in partnership with Compass Group, introduce a new approach to managing waste in commercial kitchens by combining on-site processing with real-time data insights. The system uses heating, drying, and grinding technology to reduce food scraps by up to 80%, transforming them into a dry, reusable material suitable for compost, animal feed, or soil applications. At the same time, AI-enabled tracking identifies what is being discarded and when, giving operators clear visibility into waste patterns and enabling more informed decisions around purchasing, preparation, and inventory.
This model creates value by reducing disposal costs, improving operational efficiency, and supporting more precise resource management. With Compass Group deploying these systems across its large network, the approach demonstrates how foodservice operators can standardize waste reduction at scale while strengthening efficiency and long-term cost control.
