PhenOlives Transforms Olive Oil Waste Into Sustainable Olive Flour
Kanesa D — March 12, 2026PhenOlives, an Israeli food-tech startup, has officially introduced the world's first commercial production like for upcycled olive flour, utilizing waste from olive oil. The process is conducted at the ASSI Olive Mill in Emek Hama'ayanot, utilizing a patented, chemical-free process to prevent oxidation and conver the byproduct stream into gluten-free olive flour and kernal and polyphenol extracts. This flour produced is rich in fibre and polyphenols, and is suitable for bakery, pasta, snack, cracker, and gluten-free use-cases.
“Out of an estimated 25,000 olive mills worldwide, there is now one operating mill that turns olive oil waste into a commercially viable product; a landmark moment for the olive oil sector and a strong validation of PhenOlives’ commercial readiness,” said Chen Lev-Ari, CEO at PhenOlives.
